Goat's Cheese and Fig Pizza
Ingredients:
- 250g strong white bread flour
- 7g dried yeast
- 1 tsp salt
- 1 tsp caster sugar
- 150ml warm water
- 1 tbsp olive oil
For the topping:
- 100g goat's cheese (crumbled or sliced)
- 4-5 fresh figs (sliced into rounds)
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar (optional, for a tangy kick)
- 100g mozzarella (grated or torn)
- A handful of fresh rocket (optional)
- A sprinkle of honey (optional, for sweetness)
Instructions
1. Prepare the Dough:
- In a large bowl, combine the bread flour, dried yeast, salt, and sugar.
- Make a well in the centre and add the warm water and olive oil.
- Mix together until the dough starts to form. Knead on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp tea towel, and let it rise for 1 hour, or until doubled in size.
2. Preheat the Oven:
- If you have a pizza stone, place it in the oven to heat up. A baking tray will also work.
3. Assemble the Pizza:
- Once the dough has risen, punch it down to release air.
- Divide it into 2 portions for smaller pizzas or leave as one large pizza.
- Roll out the dough on a floured surface into your desired shape.
- Transfer the dough onto a piece of baking parchment or directly onto your preheated tray or stone.
- Drizzle a little olive oil over the base.
- Spread the goat's cheese evenly over the dough.
- Arrange the sliced figs on top.
4. Bake the Pizza:
- Bake until the crust is golden and crispy, and the cheese is melted and bubbling.
5. Finish the Pizza:
- After baking, drizzle with balsamic vinegar (optional) and a little honey for sweetness (optional).
- Top with fresh rocket for added freshness.
- Slice and enjoy!
Tips:
- If fresh figs aren’t available, swap them for dried figs (soak in warm water for 10 minutes).
- For extra flavour, try adding toppings like caramelised onions or prosciutto.
